Baked Chicken with a Sweet Hazelnut Glaze
Season chicken and lay closely together in a shallow pan. Preheat oven to 375 degrees. In a saute pan, heat butter and saute shallots until golden. Add hazelnuts for 2 minutes. Add Cognac and preserves. Pour over chicken and bake covered 20 minutes. Uncover and check for doneness. Bake uncovered until done, 5-10 minutes more.

Roasting Hazelnuts - Hazelnuts can be roasted using a conventional oven and a cookie sheet. The oven should be preheated to 275°. Place shelled natural hazelnuts on an non-greased cookie sheet only one layer high. Place in warm oven for 20 to 30 minutes until the skins crack and the nut meats turn a light golden color. You can also roast them at higher temperatures for a shorter period of time
