Prep Time: 30 minutes
Season chicken and lay closely together in a shallow pan. Preheat oven to 375 degrees. In a saute pan, heat butter and saute shallots until golden. Add hazelnuts for 2 minutes. Add Cognac and preserves. Pour over chicken and bake covered 20 minutes. Uncover and check for doneness. Bake uncovered until done, 5-10 minutes more.
