Hazelnut Cranberry Bread

  • 1 cup butter or margarine
  • 1 cup white sugar
  • 4 eggs
  • 1 cup orange juice, and grated rind
  • 1 cup cranberries (leave whole)
  • 3/4 teaspoon soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup coarsely ground hazelnuts
  • 3 cups all purpose flour

Cooking Instructions

Combine butter, sugar, eggs; stir in orange juice and orange rind. Add cranberries. Beat until well mixed. Sift baking powder,flour, soda, salt, and pumpkin spice. Add to liquid mixture in three parts. Whip in ground hazelnuts and put into well greased and floured pans. Bake 65 minutes in 375 degree oven. Let cool partly on side of pan before removing form pan.
