Hazelnut Dumplings

  • 1-1/4 cups ground hazelnuts
  • 1/4 cup white bread crumbs
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon each: mace, sugar
  • 1 large egg
  • 1/3 cup milk
  • Spelt flour
  • oil for deep frying

Cooking Instructions

Hazelnuts replace hard-to-find hickory nuts in this recipe.

Mix nuts (ground to cornmeal texture),bread crumbs, baking soda, ground mace, and sugar. Beat egg with milk. Combine with nut mixture. Form 24 small dumplings. Roll each in spelt flour and let stand, uncovered, 15 minutes before cooking. Heat oil in deep fryer to 375 degrees and fry dumplings about two minutes to golden brown. Drain on rack; cool. Roll in sugar (granulated or confectioner's). Serve dumpling-style in soup or doughnut-style with stewed fruit such as peaches. Makes 24 dumplings.
